Butternut Squash Soup

This stuff is a flavorful comfort food. It is a creamy and scrumptious soup that will warm you up on a cold winter day. Eat with hot rolls to complete the deliciousness!

Butternut Squash Soup
Ingredients:
6 tablespoons chopped onion
4 tablespoons butter or margarine
6 cups peeled and cubed butternut
squash (2 butternut squashes)
3 cups water
4 cubes chicken bouillon
1/2 teaspoon dried marjoram, basil, curry powder
1/4 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper
1 (8 ounce) packages cream cheese
Directions:
1. In a large saucepan, saute onions in margarine until tender. Add squash, water, bouillon, marjoram, basil, curry powder, black pepper, and cayenne pepper. Bring to boil; cook 20 minutes, or until squash is tender.
2. Puree squash and cream cheese in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.

  1. Hi Sarah - this is Bekah's mom. I made this butternut squash soup for dinner tonight, and it was SOOOOO good! I love this kind of soup, and I have a couple different recipes for it, but this one's THE best! Thanks for sharing!
